Pecan Brittle

Pecan brittle is a delicious and popular confectionery treat known for its sweet, crunchy texture and rich nutty flavor. Pecan brittle is often enjoyed as a standalone snack, a dessert topping, or a homemade gift during holidays and special occasions. Its delightful blend of sweet, nutty, and crunchy qualities makes it a favorite among those with a sweet tooth and a love for nut-based treats.

Ingredients:

  • 3 cups sugar
  • 1 cup white Karo syrup
  • ½ cup water
  • 5 T salt
  • 4 cups of Better Halves Natural Pecans (2 cups with halves, 2 cups with broken halves)
  • 4 T Butter, divided into 1 T and 3 T
  • 2 T baking soda

Directions:

  1. Prepare a long strip of heavy-duty aluminum foil (34” long by 18” wide), fold up edges by approximately 1” to create sides then spray with Pam and smear with 1 T butter.
  2. Combine sugar, syrup, and water in heavy duty skillet over medium high heat until melted. (Note – the skillet I use is a 10.5” x 3” tall Wagner cast iron chicken fryer)
  3. Stir until mixture is boiling, reduce heat to medium and stir until mixture forms a thread – about 5 minutes depending on temperature.
  4. Put salt in measuring cup with Better Halves Natural Pecans to combine.
  5. Pour pecans into mixture and stir until mixture returns to simmer; cook for about 6 minutes until pecans turn golden brown.
  6. After around 6 minutes, add remaining 3 T butter.
  7. Remove skillet from stovetop and set on heatproof surface.
  8. Add baking soda and quickly stir to combine while mixture bubbles up.
  9. Quickly pour mixture onto foil and spread fast to a thin layer. Note – make sure you are pouring onto a heat resistant surface or countertop. I use a metal table.
  10. Cool until firm and break up into pieces.
  11. Store in air-tight container.
